Chocolate bliss balls

Perfect as a pre/post workout snack, or with a cup of tea in the afternoon, these energy balls taste like fudgey chocolate truffles and are so quick to make. The recipe is actually exactly the same as for my raw chocolate brownies, but I thought I’d try them in energy ball form this time and they work really well. Enjoy!

Ingredients: 

100g cashews

250g dates

1 or 2 tbsp cacao powder (depending on how chocolatey you want it)

1 tbsp maple syrup/agave syrup

Desiccated coconut for coating

Method

1. Blend the cashews in a food processor, then add the dates and blend again.

2. Add the cacao powder, blend, then add the maple syrup.

3. Roll the mixture into balls.

4. Put some desiccated coconut onto a plate and roll the balls in the coconut to coat them.

5. Store in a the fridge.
