Banoffee pie pots



This is my take on Deliciously Ella’s banoffee pie from her first book. So so good, and it satisfies every dessert craving even though it is just made of nuts, dates, bananas and a bit of maple syrup.


Bottom layer:

50g cashews

50g dates

1 tbsp maple syrup

Middle layer:

1 1/2 tbsp almond butter

2 bananas

Top layer:

25g Dates

1 tbsp Almond butter

1 tbsp maple syrup

1 banana



1. Blend the cashews in a food processor, then add the dates and blend again. Add the maple syrup. Put the mixture in the bottom of the glasses.

2. Blend the almond butter and 1 1/2 of the bananas to make the banana cream layer. Spoon the mixture into the glasses and place in the freezer for 15 minutes to set.

3. Cut up the remaining 1/2 of the banana and place it on top of the set banana cream.

4. Blend the dates, almond butter, maple syrup and 1/2 of the banana for the top caramel layer.

5. Spoon the caramel into the glasses, then top with the remaining 1/2 banana.
